Ingredients

  • 1 litre milk
  • 100g dark bitter chocolate (70% cocoa or above)
  • 1 vanilla pod
  • Pinch of cinnamon
  1. Break up the chocolate into small pieces and add to the milk in a saucepan.
  2. Split the vanilla pod lengthways using a sharp knife and add it to the milk.
  3. Heat the milk very gently, stirring constantly to make sure the chocolate dissolves and to avoid a skin forming on the milk. Add a tiny pinch of cinnamon and stir in.
  4. Once the chocolate has completely dissolved, whisk the mixture until it begins to boil. Turn off the heat before it starts fully boiling, remove the vanilla pod, and serve immediately.
