Is there a more iconic Mexican food than the tortilla? This extremely versatile item is used in all kinds of meals from breakfasts to soups to desserts. It is the perfect base for a light snack or nibbles to serve with drinks.
The word comes from the Spanish 'torta', which means 'round cake'. When the Spanish explorers encountered the Aztecs making a small, round flatbread they dubbed it a tortilla -'little torta'. The name stuck.
Here are three quick tortilla recipes that can serve one person or fifty.
Courgette Quesadilla
Layer very thin courgette slices on a
flour tortilla . Top with chopped spring onions, minced
jalapenos and grated mild cheese. Place another flour tortilla on top and fry on both sides until the cheese is melted. Cut into wedges and serve.
Chilli Cheese Quesadilla
Mix grated cheddar or Monterey Jack cheese, chopped coriander and a little
Discovery Wicked Chilli Seasoning in a bowl. Spread the mixture over a flour tortilla, top with another tortilla and fry on both sides until the cheese is melted. Cut and serve.
Spicy Tostada
Put flour tortillas under the grill. In a bowl, mix
Spicy Refried Beans, a chopped tomato and some
Tangy Fajita Table Sauce. Layer the mixture on the crisp tortillas, topped with grated cheese and put back under the grill until the cheese is melted. Serve with sliced avocado, sour cream and chopped coriander on top.
